Galindo is located in the Belles Artes neighborhood, near Parque Metropolitano. The restaurant serves traditional Chilean food, and had a large bar area with a wide selection of drinks. I went after going to the park, and really enjoyed it a lot.

A bowl with hot butter and lots of shrimp. There are also small pieces of toast on the plate next to the bowl.

The restaurant had a fairly large indoor seating area, and a large outdoor patio as well. It was very popular, and the relaxed atmosphere made it a good place to go after a day in the park. It’s one of those places that is is not overly fancy or flashy, but just does a really good job at what they do.

A large plate with mashed potatoes covered in a thin brown gravy. At one end of the plate is a heaping pile of pork ribs, they are so tender you can see them falling off the bone.
Costillar ahumando con agregado, served with puré.

The waiter recommended to try the pastel de choclo, but I had already tried that at Donde Agusto, and wanted to try more things. I wound up ordering costillar ahumado con agregado which is smoked pork ribs with a side dish. Most of the side dishes that they offered were different types of potatoes. I selected puré, which is mashed potatoes for the side dish. The meat was juicy and tender. Ordering mashed potatoes from a restaurant is always a bit of gamble because they can sometimes be gummy or bland, but these were some of the richest and most flavorful mashed potatoes I’ve ever had.

For dessert I had leche asada, which is what I would have called a flan.

This is a restaurant that is recommended to tourists visiting Santiago, and I would highly recommend it as well. The server was very patient, and spent a lot of time explaining the menu. It is also in a very nice area to explore. Pablo Neruda’s house La Chascona is nearby, as well as the Santiago Zoo.
